Still on Spring Break and loving every minute of it. You know what I love a little more, though? Today’s blogger extraordinaire (!) I met her at Elevate last year and she's every bit as wonderful as she is on her bloggy. Pinky swear. I asked her to come by and keep you company while I'm away. She said Sure...Isn't she nice? Enjoy the wonderfulness that is Erin…You’re welcome:)
Well hey Nay lovers.
I don't know about you, but does your love for this woman just run naturally deep?
There is sweet and then there is really sweet. I often find myself asking "how does she do it?" I am guessing I will never know, but I will forever appreciate it. Fortunately for me, our bond goes beyond a computer screen.
You see, we like to hangout in Cali on the regular.
And by regular, I mean once, but I am bound and determined to make it happen again.
So this is awkward--I just remembered I haven't even introduced myself yet.
My name is Erin and I make a fool of myself over at Living In Yellow daily.
When I am not doing that I am either drinking wine or eating something really unhealthy, which is where my inspiration for today's post came. I thought of it only because I just got done eating it. Plus, I am a believer that all good things must be shared so that's what I am here to do.
Without further ado I present to you....
It should be noted that I was not able to get any actual desirable looking pictures of this dish so you are going to have to excuse the appearance and trust the taste. What you are looking at is what I like to call sausage hashbrown casserole. Is it hashbrown or hash brown? Do things like that really even matter? Anyhow, I am not an egg fan by any stretch of the imagination so breakfast casseroles have always been a bit anticlimactic for me. Until this sucker magically appeared in my life that is. Potatoes, sausage, veggies, and cheese. Does life need any other ingredient? Yes. Sour cream, so we threw that in there as well. Here is the recipe peeps. Make it, love it, repeat, and repeat.
Sausage Hashbrown Casserole Ingredients:
2 pounds sausage
(I used one pound spicy and one pound medium)
1 cup sour cream
1 can cream of chicken soup
1 can french onion soup
1 cup onion
1/2 cup red pepper
1/2 cup green pepper
2 cups shredded cheese
30 oz country style hashbrowns
Salt and pepper to taste
1. Brown the sausage
2. In a separate bowl combine all of the other ingredients. Add in the sausage.
3. Pour into a 9x13 pan and bake for 45-60 minutes at 350.
And just like that you moved from a 9 to a 10 in your man's eyes.
Thanks for allowing me to share a bit of my stomach with you all today.
Hope to see you over here soon!
